The Art of Turkish Baklava
Authentic Turkish baklava is a craft. Each layer of phyllo must be thin enough to read through, yet sturdy enough to hold its shape. The filling — crushed pistachios in the traditional Gaziantep style — must be finely ground but not powdered. The syrup must be cooled before pouring over hot baklava (never the reverse), allowing each layer to absorb just the right amount of sweetness.
